Our most popular dish! Pipikaula derives from the paniolo (cowboy) traditions of Hawai‘i. It takes its name, which translates to “rope beef,” from the dried beef (pipi) strips (kaula) consumed on long cattle drives. For this customer favorite, we season and dry strips of beef chuck. To serve, the pieces are grilled or sautéed, yielding an intensely beefy umami flavor.
Cattle were introduced in Hawaii at the turn of the 19th century when Capt. George Vancouver presented King Kamehameha I with a few cows and a bull. Kamehameha III brought in Mexican-Spanish cowboys to teach Hawaiians roping and herding, beginning the paniolo tradition.

We offer overnight shipping Monday thru Wednesday. Cut-off is noon the day prior for next-day shipping. Orders that arrive after noon on Wednesday will be shipped the following Monday or Tuesday.
STORAGE & COOKING
To store: Ships in heat-sealed zip-top bag; do not remove from bag until ready to prepare. Product may arrive partially thawed; refreezing is not recommended if product has thawed partially or fully. Refrigerate or freeze immediately upon receiving. May be stored in the refrigerator up to 3 days or freezer 1 month.
Preparation:
Step 1: Defrost product in bag. (May take up to 2 days to completely defrost from fully frozen. Product may be reheated while partially frozen but will impact reheating times.)
Step 2: Heat 1 tablespoon of vegetable or canola oil to a frying pan and heat to medium-high.
Step 3: Remove product from bag. Add pipikaula to pan; do not overcrowd—you may need to cook in batches. Sauté until cooked through and exterior is brown and crispy.
Step 4: Kau kau time! Kāhea ʻai! Time to eat! Come and get it!
